Sai Oua, also known as Northern Thai sausage or Chiang Mai sausage, is a flavorful and aromatic sausage originating from the northern region of Thailand. It is made by blending ground pork with a variety of fragrant herbs and spices, giving it a distinct taste profile.
The key ingredients in Sai Oua typically include lemongrass, kaffir lime leaves, galangal, shallots, garlic, chili peppers, and a variety of Thai herbs and spices. These ingredients are finely chopped or pounded together and mixed with the ground pork to create a well-seasoned sausage mixture.
Traditionally, the sausage mixture is stuffed into casings made from either natural or synthetic materials. Once prepared, the sausages are typically grilled or pan-fried until they are cooked through and have a slightly crispy exterior.
